About the Recipe
This is the perfect weeknight curry. it's primarily comprised of ingredients you probably already in your household
Ingredients
2tsp Vegetable Oil
1 Onion
2 Cloves of Garlic
1tsp Fresh Ginger
4 Chicken Breast Fillets
3tsp Curry Paste
400g Tinned Chopped Tomatoes
Greek Yoghurt
1 handful Fresh Corridander
500g Rice
Preparation
Step 1
Heat the oil in a large pot over a medium heat. Add the chopped onions, garlic and ginger and cook for 2-3 minutes.
Step 2
Cut the Chicken into cubes and add to the pot and fry for another 2-3 minutes before adding the spice paste, tomatoes and 250ml of water.
Step 3
Bring this to a boil and then simmer for 25 minutes until thick and creamy.
Step 4
Cook the rice as per the pack instructions
Step 5
Stir through the yoghurt and corridander into the curry before serving with the rice.
